Chicken Makhani Handi recipe is very simple. Here is the basic recipe of a simple Chicken Makhani Handi:
Ingredients:
- 500 gms chicken
- 1/4 cup oil
- 1/4 cup butter
- 4-5 red chillies
- 2 tsp coriander seeds
- 11/2 tsp cumin seeds
- 1tsp black pepper seeds
- 2 tsp black pepper powder
- 5-6 green cardamom
- 3/4 cup onion paste
- 1 1/2 tsp salt
- 2 tbsp ginger-garlic paste
- 250 grams curd
- 1/3 cup fresh cream
- 15-16 whole cashew nuts
- 1 tsp gram masala
- 2 tsp fenugreek
Instructions:
1. First of all, dry roast some spices. Take dried red chillies, cumin seeds, coriander seeds, green cardamoms and black pepper. Dry roast these spices a little so that their moisture is removed and it becomes easy to grind it for two minutes and a good aroma will also be released from them. Let it cool down a little then put it in a mixer jar and grind it coarsely. You do not have to grind it too fine, just lightly. Keep it aside,
2. Take a pan and add oil and butter in it, if you do not have butter then you can skip it, you can cook it in oil.
3. Now, we will add onion paste from about 2 medium size onions which I had grinded without adding water, so we have to fry it on medium flame for five minutes, as the sweetness inside the onion will disappear if you do not fry it, if you add chicken in raw onion then the taste of gravy will change, so do fry it for three-four minutes.
4. Further, we will add chicken and some salt to the chicken
5. Add ginger garlic paste and fry chicken till it becomes soft .The color of the chicken does not become off white. It will be fried well for 7 minutes.
6. Then we will add the masala which we had dry roasted and ground a little coarse, mix it well and along with the masala add curd and now fry it for eight minutes.
7. And yes, along with this, we will also add black pepper. Now we fry it.
8. Add some water let it boil on high flame, then we will slow down the flame and cook it for about 20 minutes on low flame.
9. Since the chicken was cooked well, so at this point we add fresh cream or milk.
10. Take 15-16 whole cashew nuts and grinded finely in the mixer.
11. Add gram masala, fenugreek and everything is already cooked.
12. Just add cashew paste and cook it on low flame for 5 minutes.
13. After 5 minutes have passed since the chicken was cooked. We have to wrap it and our very delicious chicken makhani handi is ready .
14. Serve it with roti, naan, kulcha, paratha, butter naan etc. You will be happy after eating it.
